Meiomi Red Blend with Chili Beef Lettuce Wrap
Ingredients
- 1 tbsp olive oil
- 1 tbsp minced garlic
- 1 tsp minced ginger
- 200g lean minced beef
- 200g minced pork
- 1 red chili, seeds removed and diced
- 4 green onions, sliced
- 2 tbsp soy sauce
- 1 tsp honey
- 1 tbsp rice vinegar
- 1/2 tsp salt
- handful fresh basil
Dressing (Optional)
- 1 tbsp soy sauce
- Juice of ½ lime
- 1 tsp sesame oil
- ½ red chili, thinly sliced
- Small bunch of scallions, chopped
- 1 tsp light brown sugar
Directions
- Heat a large frying pan and add a little oil. Mix the minced beef and pork together. Season with salt and pepper and mix well. Fry the mince in the hot pan with the garlic and ginger for 5 minutes.
- Add chili, green onions, soy sauce, honey, vinegar and salt. Cook another 3-4 minutes until the beef starts to darken and crisp. Taste and season with salt and pepper if needed.
- Mix all the dressing ingredients together and adjust to taste.
- To serve, spoon some of the mince mixture into the lettuce leaves, drizzle with a little dressing and serve.
